How to Make Kenyan Ugali

What is Kenyan Ugali?
Kenyan ugali is a traditional staple made by cooking white maize meal with water until thick, smooth, and firm. It is one of the most popular foods in Kenyan homes and is commonly served alongside beef stew, chicken stew, sukuma wiki, beans, ndengu, fish, or other vegetables.
Simple, filling, and easy to prepare, ugali is traditionally eaten by taking a small portion, shaping it with your fingers, and using it to scoop up your favorite stew or vegetables.
Ingredients
- 2 cups Jogoo Maize Meal/Hostess White Maize Meal
- 4 cups water
Instructions
- Bring 4 cups of water to a boil in a heavy-bottomed saucepan or sufuria.
- Reduce the heat to medium and gradually add about 1 cup of the Jogoo Maize Meal/Hostess White Maize Meal, stirring continuously with a sturdy wooden spoon.
- Continue adding the remaining maize meal a little at a time while stirring and turning the mixture to prevent lumps from forming.
- As the ugali thickens, continue folding and pressing it against the sides of the pot with the wooden spoon.
- Reduce the heat to low and continue cooking and turning the ugali for about 5–10 minutes, until it is smooth, firm, and pulls away easily from the sides of the pot.
- Shape the ugali into a mound using the wooden spoon, then turn it onto a serving plate.
- Serve hot with your favorite Kenyan stew, vegetables, beans, or fish.
Tips for the Best Kenyan Ugali
- Add the maize meal gradually rather than all at once to help prevent lumps.
- Use a sturdy wooden spoon or mwiko because the ugali becomes quite thick as it cooks.
- Keep folding and turning the ugali as it thickens to create a smooth, even texture.
- If the ugali is too soft, add a little more maize meal and continue cooking.
- If it becomes too firm before it is fully cooked, add a small amount of hot water and continue stirring.
- A heavy-bottomed saucepan or traditional sufuria works especially well because it distributes heat evenly.
- Ugali should be firm enough to hold its shape when served but still soft enough to easily pinch off a piece.
