Kenyan Ndengu Recipe – Green Gram Stew

What is Kenyan Ndengu?

Kenyan ndengu is a hearty green gram stew made with tender green grams simmered with onions, tomatoes, vegetables, and aromatic spices. It is a popular everyday meal in Kenyan homes and is commonly served with chapati, rice, ugali, or vegetables. Ndengu is filling, flavorful, and easy to prepare for a comforting family meal.

  1. Rinse the green grams thoroughly and place them in a large pot. Cover with plenty of water and bring to a boil.
  2. Reduce the heat and simmer until the green grams are tender, about 45–60 minutes. Add more water as needed while cooking. Once tender, drain any excess water and set aside.
  3. Heat the Cowboy Cooking Oil in a large pot over medium heat.
  4. Add the chopped onion and cook until softened and lightly golden.
  5. Stir in the Tropical Heat Garam MasalaGarlic Powder, and Ginger Powder. Cook for about 30 seconds until fragrant.
  6. Add the diced tomatoes and cook until softened and broken down into a thick sauce.
  7. Add the carrots and potatoes and stir to combine.
  8. Add the cooked green grams and pour in enough water to create your desired amount of gravy. Stir well.
  9. Cover and simmer over medium-low heat until the potatoes and carrots are tender and the stew has thickened, about 15–20 minutes.
  10. Add the green bell pepper and cook for another 3–5 minutes.
  11. Taste and adjust the salt as needed. Garnish with fresh cilantro if desired and serve warm.

  • You can soak the green grams for a few hours or overnight to reduce the cooking time.
